Overall I think blacksmithing will be in a good place. Armor and weapons has historically been decent markets, even if they are usually eclipsed by markets like alchemy, enchanting and jewelcrafting. The new utility items and the mount are extra markets that look like they can provide a large amount of profit.

One of the advantages of Blacksmithing is the sheer variety of weapons with A LOT of potential crafts. This gives you a much wider array of potential customers and will absolutely help you maintain sales. Not too mention the fact that weapons are the most attractive slot to spend gold upgrading so weapon sales will be in a better place than the armor markets in Legion.

Then Leatherworking was scrutinized

Leatherworking is looking to be on par with blacksmithing for the most part. You get to armor types which balances against the much worse roster of craftable weapons. I expect both weapons and armor to be the main money makers here.

The utility items are a bit of a mixed bag and it depends on what kind of content players will focus on. I expect them to sell, but they are not on the level of power increasing consumable like flasks and enchants.

Finally Tailoring was put under the microscope

Tailoring is looking weaker than the other two armor professions. It is particularly hurt by not having access to any weapons. The bags will sell, but the fact that you need to farm dungeons for the 32 slot bag is very disappointing, and makes the effective profit much lower.

The consumables are very lackluster as well. Overall I think tailoring is looking quite weak relative to the field. One thing that can propel it to greatness are the shuffles. If it is effective for shuffling enchanting materials or expulsom it will be an essential profession, but outside of that it is looking like one of the worst ones.

Using the scrapper is easy. If you have ever used the Obliterum Forge that was introduced in Legion, you will notice that the UI for the scrapper is very similar. Thankfully, Blizzard improved it for the scrapper.
You can put up to 9 items into the scrapper and then hit the Scrap button. This will scrap all 9 items one after another, similar to when you craft multiple items with one click.

Unlike the Obliterum Forge in Legion, the scrapper is not limited to crafted items. Instead, it is limited to Battle for Azeroth armor and weapons. You can scrap almost all Battle for Azeroth armor and weapons:
Crafted armor and weapons, random world drops, armor and weapons you get from quests and even gear from dungeons and raids can be scrapped.

There are a few exceptions to this though. Armor you can buy from vendors for example cannot be scrapped.
What do you get from scrapping?
Scrapping armor and weapons will destroy the items and reward you with some crafting materials in return. The materials you get depend on which profession can craft items for the itemslot that you are scrapping.
If you scrap a fist weapon for example, you will be rewarded with a some scales and bones, since fist weapons can be crafted using the Leatherworking profession.
If you scrap a plate breastplate, you will be rewarded with some ore and flux, since plate breastplates can be crafted using the Blacksmithing profession.

BilisOnyxia again provided some valuable data on prospecting rates with Storm Silver Ore on the betaWeb Auction House tool made by /u/ukon1990 has also been updated with some destroying data

While the data set is not that big yet, I still think that it can give us an idea about what prospecting and milling yields will be like in BFA. I could not find any posts displaying any results on the subreddit, so I figured that I'd post some. I hope that someone finds it to be useful.

I don't really have a spreadsheet for this, but the data is available in my web app as of version 2.166

How much do you rely on prospecting or milling items to make gold? Will you be destroying your materials in early Battle for Azeroth or selling them on the Auction House? This is a trick question./u/Beaconn who made a 142% Movement Speed Warrior Set for No gold

Ever since the bear tartare nerfs I was looking for ways to increase efficiency with farming through old dungeons and raids. That's when I saw that streamers like Asmongold had created a Warrior set that could run insanely fast. However, they spent a lot of time and gold to make it and I hardly spent any time/gold on mine to make it just a little bit worse.

If you don't feel like watching the video here's the TL;DR of it

Build:

Aggramar's Stride (Stacking Mastery as much as possible will give you the best result on a fury warrior)
Sephuz's Secret (So if you charge something you get a huge movement speed buff)
Runeblade of Baron Rivendare (Flat 10% Movement Speed buff, only one will work if you get 2 of them)
Bounding Stride also will help you a lot, it'll get you close to the amount of speed that Sephuz's Secret does.
Bear Tartare will get you up to around 160% movement speed with it.

Will you be speeding to level 120 or taking your time? How much will you prioritise gold-making as you level?

Gold-making requires items for transmog, battle pets or crafting materials...Thus farming old dungeons and Raids is important for the WOW economy. I created a Spreadsheet that goes into detail about the timing, gold per minute, some general trends of specific expansions for Raw & Vendorable Gold.

Five Pillars of Farming

Transmog & Appearance Sets: World of Warcraft has many unique models and many people have their favorites and want to find more transmog items to make their characters look cool or perhaps to complete those "Sets" in the collections tab.

Mounts & Battle Pets: Who doesn't like riding around on the most unique models and showing it off to their friends or guildies that they got this EPIC mount that took them WAY too long to farm or grind for.... Remember Pokemon!? Yep... Battle Pets, essentially take the principles of Pokemon and give them a nice visual update to a more World of Warcraft Flavor. Many of these unique creatures sell for a pretty penny. However, there are some pets (Just like those stupid Zubats and Rattatas) are ALL TOO COMMON!

Gold Making: Raw Gold: Some folks just like to see their inventories stack up with gold... Or may be on a time crunch and can't wait for days or even weeks to sell valuable transmog... So typically we look at easy and quick ways of making lootable (or vendorable) gold. Typically this method will yield less amount(s) overview, however if you really just need to buy that enchant or gem for your raid tomorrow night... This may be why you are running OId Dungeon(s) & Raids.

Gold Making: Materials & Transmog: Other players may be more interested in a longer-term investment with their time running these old dungeons & raids. Typically materials are more liquid than the transmog pieces... However depending on the transmog piece, you can sell them fairly quickly or can take up to a few months to sell. More waiting... More potential gold that can be earned.

Fun & Nostalgia: Some just like to run the instance because it is their favorite... They met some of their guildies there? They remember that epic feeling when they were the first to down the last boss of the raid! This is often an overlooked aspect of old dungeon(s) & raids. Of course, there is usually more than 1 reason for a player running the Dungeon/Raid.
