To change mastery: Talk to the quest giver of your current mastery and pay the 150g fee. Then talk to the quest giver of the mastery you want and acquire the new mastery instantly.

I tried googling this for retail and this was the first hit:

So all 3 specializations still exist. I dont know if they affect newer addons, but it should work with older stuff. I dont know the requirements to get it, because I leveled it up pre BFA with cheap WOD mats, where the professions werent devided by addons. So as you can see no information here, so I just went to the main city and visited the alchemy trainer: Lilyssia Frescanotte for Alliance. Its likely the the alchemy trainer in Orgrimmar for Horde players.

Lilyssia Frescanotte gives you the 3 options and here is the link for the pot specialization: Maestria nelle Pozioni .

The most favourite one is probably transmute, which my rogue already got during TBC, but I want the other 2 too, so my Monk now gets this one and my new Dracthyr will get elixir. ^^

Edit: It seems you need 300/300 Classic Alchemy to get the quests. Edit2: Yes. Can 100% confirm. Just leveled up Vanilla alchemy to max and the quests popped up. Didnt do any other addon, not even Dragonflight with my Dracthyr.

My knowledge of alchemy is vast. It is, however, general in nature. If you wish to specialize, you will have to find others who have narrower fields of study.

If you wish to specialize in potion creation, I would recommend that you seek the help of Lauranna Thar'well of the Cenarion Expedition.

Her knowledge of plants will allow you to make the most of your raw materials. Look for her in Zangarmarsh and tell her I sent you to her.
